Belgian Tripel is a stronger paler cousin to Belgian Dubbel and is one of the Abbey styles of beers brewed by Trappist monks (and others). It is a bright, complex ale that can be served like wine or Champagne at dinner, and pairs very well with a wide variety of foods. Tripel shares many qualities with Saison, having a complex ester profile of apple, apricot, and pear, but is brewed to a higher alcohol level, and more bitterness. It is a beer that celebrates the brewer’s art. However you describe it, it is a prince among beers and more than worthy of being at your table.
